What does online actually change about how TV reaches you?
A broadcast signal is pushed continuously down a dedicated line. An online stream is pulled by your device in small pieces over the same connection that carries everything else in your house. A live channel typically arrives as segments of about six seconds, requested one after another and stitched together by the player. That design explains most of what you experience. A stall longer than the buffer becomes a visible freeze, because there is nothing left to play while the next segment is late. Which of the three parts failed when the picture freezes?

Why does a very large channel list make the app feel broken?
Player apps load the visible channel list into memory and keep it there. Above roughly 18,000 visible channels most of them become sluggish, then unstable: slow guide loading, long pauses on channel change, occasional crashes on launch. This is a player limitation, not a server fault, which is why it survives every reinstall and every router reboot.
