Why does a passing speed test tell you so little?

A speed test opens several parallel connections to a nearby server and measures peak throughput over a few seconds. A live stream does almost the opposite: one connection, to one specific source, requesting a small segment roughly every six seconds, for hours. The test rewards burst capacity. The stream rewards consistency and low variance. A line can post 300 Mbps and still have latency spikes, brief loss, or a congested hop toward one particular source, all of which starve a segment queue while the test result stays flawless. Above about 25 Mbps, raw throughput has effectively stopped being the constraint, and every further megabit you buy changes nothing about the stall.

Why does it only happen in the evening?

Local access networks are shared. Cable segments, and to a lesser extent fiber distribution, carry many households on common capacity, so between roughly 7pm and 11pm the usable rate on your street falls even though your plan has not changed. Speed tests run at peak often still look acceptable, because the test is short and grabs what capacity exists in that instant. A three-hour stream cannot do that. If your stalls cluster in a predictable window and vanish at midnight, you are looking at congestion, and the fixes are the ones that reduce sensitivity to it: wired connection, lower resolution during the window, or a service with capacity headroom of its own.

Can the app be at fault while the network is perfect?
